How do you make it?

  1. Place the mixture in a bowl and add the salt and half of the grated cheese.
  2. Add 180ml of lukewarm water and 30ml of olive oil.
  3. Knead for 10 minutes by hand or with a food processor fitted with dough hooks.
  4. Line a baking tray with baking paper and shape the dough on it to about 2cm thick.
  5. Cover with a tea towel and leave to rise for 45 minutes at room temperature.
  6. Preheat the oven to 220°C. Brush the dough with the remaining olive oil.
  7. Dimple the dough with your fingertips and sprinkle over the rest of the grated cheese.
  8. Bake for 20–30 minutes until golden and cooked through.

Serving suggestion

It is very easy to make a cheese-onion bread. For example by adding a mix of blue cheese, Parmesan and mozzarella. Finger-licking good. Literally and figuratively!
