How do you make it?

  1. Heat some oil and cut 500g of leftover vegetables into cubes.
  2. Add the vegetables, the SoupStarter bag, a good pinch of salt and a splash of water to the pan. Stir, then cover with a lid and stew over a medium-high heat for 10 minutes. Meanwhile, bring 750ml of water to the boil.
  4. Pour the hot water over the vegetables until just covered and bring back to the boil.
  5. Reduce the heat and simmer gently until the vegetables are cooked (about 5 minutes).
  6. Season with salt and pepper, purée, and serve!
